Researchers in Belgium are leveraging artificial intelligence (AI) to revolutionize the centuries-old tradition of beer brewing. Led by Prof Kevin Verstrepen of KU Leuven University, a team of researchers has harnessed the power of AI to enhance the flavor and consumer appreciation of beers. Their groundbreaking work reveals the potential of AI to predict flavor and consumer appreciation through comprehensive chemical analyses and machine learning models.
The perception and appreciation of beer flavor depend on a complex interplay of chemical compounds and external factors. To understand and predict these dynamics, the researchers conducted extensive chemical and sensory analyses of 250 different beers. They employed machine learning models to predict flavor and consumer appreciation by combining over 200 chemical properties, quantitative descriptive sensory analysis, and mapping data from over 180,000 consumer reviews.
The results of the study, published in Nature Communications, unveiled the potential for AI to significantly improve predictions based on conventional statistics and accurately forecast complex food features and consumer appreciation from chemical profiles. The best-performing algorithm, Gradient Boosting, yielded models that outperformed traditional predictions and identified specific and unexpected compounds as drivers of beer flavor and appreciation.
Additionally, the research demonstrated the capability of AI to create variants of both alcoholic and non-alcoholic beers with improved consumer appreciation by incorporating the identified compounds. This breakthrough in the beer industry not only sheds light on the complex links between food chemistry, flavor, and consumer perception but also lays the groundwork for the development of novel, tailored foods with superior flavors.
